Freezer Meals – Mediterranean Pork

Freezer Meal Time!

I’ve mentioned in my last few posts that these adorable monkey feet and adjusting to parenthood have made it very difficult for me to stand in the kitchen and prepare a nice and healthy meal each night.

I mean, c’mon…

Adorable FeetSock Monkey FeetObviously, I’d much rather enjoy every moment I can with my little guy (and take pictures of his feet!). Enter the freezer meal…

Today – Mediterranean Pork.

Freezer Meals – Mediterranean Pork What’s a freezer meal?

A meal that is prepped and frozen prior to cooking all day in the crock pot. Pretty simple, right?

Well, without a doubt, they are lifesavers! But are they any good? Round one (pot roast) proved successful! So let’s move on to the next one…

First, the supplies:

Large Freezer Bags (gallon)
Marker (permanent wouldn’t hurt)
Vacuum Seal (not necessary, but definitely an added bonus. We LOVE ours and use it all the time)

Next, the ingredients:

6-8 Pork chops
1 Sweet potato (although we used two the first time and three large sweet potatoes the second time)
½ Cup of olive oil
2 Cups of chicken Stock (we used three to four, unmeasured because of the extra sweet potatoes to ensure we had enough liquid)
4 Cloves of garlic, chopped (we always tend to use extra here too because we love the stuff)
2 Tablespoons of paprika
2 Tablespoons of chicken seasoning (we used Montreal Chicken)
2 Tablespoons of dried oregano
2 Tablespoons of dried basil (we used fresh basil because we grow it out back)

Before we begin:

Write the name of the dish and all of the ingredients on the freezer bag/s in permanent marker. Include the cooking instructions. Don’t assume you will remember later on. We may *think* we’ll remember later, but probably not.

Prep Instructions:

Peel and chop the sweet potatoes. Chop or slice the garlic cloves.

Mix the sweet potatoes, garlic, olive oil and all the seasonings together in a large bowl.

And finally, bag the food. If necessary, use two separate freezer bags… one for the sweet potato mixture and one for the pork.   I didn’t add the chicken stock until I was ready to cook.

Cooking Instructions:

Thaw the pork and sweet potatoes overnight in the fridge. The next day, dump everything in the crock pot (I love crock pot dishes!!). Pour in the chicken stock. I like to add a little of the stock before I put the food in and then pour the rest over the top, but people say I’m weird.

Cook on low for eight hours.

But is it any good?

Delicious! We’ve already made this dish twice. And I have a feeling we’ll have it again soon…

Fall’s Must Read New and Recent Releases

Fall is my favorite time of year, especially when the weather actually cools once the sun goes down.  For me, there’s nothing much better than curling up in my comfy chair, throwing a blanket over my legs, lighting a candle, and reading a great book on those cool fall nights.  So today, I’ve decided to share six new releases that are must reads on my bookshelf.  If you’re looking for the next bestseller in the young adult, mystery, suspense, fantasy, and thriller genres, check these out and help support six fabOoolous authors!

Skeleton’s Key by Stacy Green

Cage Foster can’t catch a break. The discovery of a dusty skeleton in the antebellum home he’s caring for is bad enough. But the unearthing of two fresh bodies, buried during his tenure at Ironwood Plantation, may land Cage on Mississippi’s death row. Even worse, the one person certain of his innocence is a pushy Yankee newcomer, a woman who talks too fast and still believes in the romance of the Old South.

A specialist in historical renovation, Dani Evans intends to restore Ironwood to its former glory while she rebuilds her life after the death of her mother. Death, hidden treasure, and falling in love with a murder suspect were not part of the plan. The lure of the infamous Ironwood treasure cache convinces Dani the skeleton is the key to unraveling the legend, and that the treasure itself is the motive for the murders.

Cage is certain an old grudge is setting him up for murder, but the evidence against him is mounting and time is running out. Dani believes she can find the truth before Cage is arrested, but her search for answers will uncover a descent into madness that should have stayed buried.

Black Opal by Catie Rhodes

I’m Peri Jean Mace, and I see ghosts. Between the ghosts and my own dumb choices, my life is a puke-inducing screamer of a roller coaster ride.

My latest dumb choice catapults me all the way from East Texas to South Louisiana. So far, it’s been a trip to the bad crap zone. My boyfriend and I got into a fight because he’s a lying jerk. A ghost trashed my car because she wants her murder solved. The boyfriend’s ex-wife—who’s still sniffing around—loves the drama because she’s a…never mind.

I’d love nothing more than to take the next bus back to Texas. But this teenage ghost is my boyfriend’s sister who went missing twenty years ago. Her family needs to know what happened.

Now I’m stuck in this huge house with people I didn’t even know existed twenty-four hours ago. They’re nice enough, but talk about awkward. This family’s secrets could be the basis of a tell-all tabloid soap opera.

Trying to solve this murder might be another one of my dumb choices. There’s more suspects than ants on ice cream. The killer has gotten away with this for twenty years, and it seems like any clues would be long lost.

But every conversation reveals another secret. Little bits and pieces lock together as I close in on a horrifying truth.

How far will a murderer go to protect a secret? My guess is pretty durn far.

Will he steal her heart and stomp over it like other guys did?

Will she let him into her heavily fortified world despite herself?

Pony Fest 2013 – Football “Sweetie” Sweetheart

It’s Pony Fest Time!

What is Pony Fest?

Pony Fest is an annual contest and friendly competition between book ponies hosted by Rebecca Enzor.  All ponies are based on a full-length novel and are original pieces of art.  I sat back and enjoyed last year’s show, viewing all the beautiful creations.  But after a good friend of mine took it upon herself to donate a Football Sweetheart pony, I decided to enter my girl into the pageantry.

SweetieThis is Sweetie.

Drawn and photoshopped by the uber-talented Angela Wallace, Sweetie represents all the girl ponies that wanted to play football, but had to settle for a different role within the team.  For Sweetie, this meant joining the athletic training staff.  She tends to the players’ injuries, helps with their treatments, and like any good pony, she even gives them water when they’re thirsty.  She loves her team and will do everything within her pony-power to help propel the boys to the state championship, even when she has a hard time focusing because of her best pony pal’s disappearance…

Because as we all know…

High School Football Can Be Murder.

My YA Mystery novel, Football Sweetheart… available on Kindle and Nook!

Stop by Rebecca’s blog and check out the other participating ponies.  Voting begins October 5th and the winning pony will receive an actual custom pony designed by Kalavista.

Have a great weekend and Happy 30th Anniversary to My Little Pony!  Wow….

More Football Foods!

Football is here!!

This means it’s not only time to watch our favorite teams kick off, but also time for those special foods that we make specifically for football games.  Last week, I included three of my family’s recipes: deviled eggs, queso, and sausage balls.  Today, I’m adding to that list and sharing two more of our household’s must-haves… plus a few of our favorite adult beverages perfect for tailgating!

Mom’s Drunken Weenies

The picture says it all… that’s all you need!

A crock pot
A package or two of party weenies
A beer of any kind, I used Bud Light this day
Any kind of BBQ sauce, although Stubb’s is might tasty

Dump, mix, cover, and cook!

Cook on high for an hour or two and then simmer.  It’s that simple!  And guys love this stuff…

Easy Spinach and Artichoke Dip

One package of frozen, creamed spinach
16 oz. of drained artichoke halves, cut into bite size pieces
2 tablespoons of jarred pesto
2 tablespoons of horseradish sauce (or mayonnaise if preferred)
1/2 cup of chopped onion
Grated Parmesan cheese

Heat the creamed spinach per the instructions on the package.  Mix together with bite-size artichokes, pesto, horseradish sauce, chopped onion, and a few shakes of the cheese.  Add salt and pepper to taste.  Pour mixture into an oven-safe dish, cover with Parmesan cheese and bake at 350 degrees for at least thirty minutes.

I saw this cooking segment with Guy Fieri years ago on Regis and Kelly, and Guy put together his spinach and artichoke dip in an aluminum baking pan covered in foil.  Of course, he used more ingredients than I do (he’s a culinary wizard, after all) and he grilled it outside!!  I haven’t tried grilling it yet, but maybe at the next tailgate…

And now for our favorite quick and easy ADULT BEVERAGES.

By “adult beverage,” I mean NO ONE under the age of twenty-one should try any of the below drinks.

Margaritaville Skinny Margaritas

Just add ice!!

I love this stuff.  It is now a staple in my household and I always make sure to have a bottle in the pantry or refrigerator!

Ice-Cold Beer

Pick your favorite flavor!  I like more than what’s pictured above… but everyone gets the idea.

Classic Bourbon and Coke

The BEST stuff ever!!

I’ve always enjoyed Whiskey and/or Bourbon and Coke with football.  Heck, I even knew a boy in college my friends and I called “Jim Beam Boy.”  Why?  Because he always kept us warm by pouring a little Jim Beam into our Cokes at the football games.  Now, that’s a good friend!

Do you make anything special during football season?  What’s your favorite tailgating beverage?  Please share!  I’d love to hear from you.

And since it’s football season, remember to check out my YA Mystery novel, Football Sweetheart… available on Kindle and Nook!
